2-3 cups of raw sugar pie pumpkin, cut into 1″ squares
3 pounds of dates, pitted
cinnamon
ginger (dry or fresh)
1 1/2 to 2 cups of pecans
1 ripe persimmon
vanilla bean
Vita-mix blender
Food processor
Pie Pan
1. Make crust from pecans and 1 pound of dates in food processor(pinch of cinnamon optional). Press crust into pie plate.
2. Add pumpkin, remaining dates, persimmon, cinnamon, ginger, and few scrapes of the vanilla bean – blend in vitamix until super creamy.
3. Either serve as is or freeze for a few hours and serve chilled.
When I make this pie again… I will steam my pumpkin first to make it softer. My pies were a little “crunchy” – they were still very good and my son and I loved them! I do not have the Vitamix and this crunchiness may change to creaminess if I had Vitamix. I am using the Ninja 1100… and it does not mix things as well as the Vitamix seems to.
